FRANK ASHTON CLASSIC ITALIAN AND ADDITIONAL RECIPES: My name is Frank Ashton and I live in the Cleveland Ohio area. I was a high school art teacher for 33 years. I love painting,especially Impressionism; and traveling with my wife; but my other love is for cooking. Over the years I have probably cooked for some 20,000 people. This includes cooking free for many groups to raise funds for worthy causes. Most of my recipes are original from me and some from my mother or my wife Dottie. This has led me to decide to share my original recipes with others. This site has 110 recipes to date! My goal is to be able to give real recipes that really are excellent. * TILAPIA IN TWO WINES SAUCE ASHTON STYLE (#33)

INGREDIENTS: (VEGETARIAN STYLE)
     4 to 6 larger (1 piece per person) pieces of tilapia or any
     good white fish including cod
     3/4 cup Pinot Grigio white wine
     3/4 cup of white port wine
     1/2 stick of butter or margarine
     1/4 cup of virgin olive oil
     juice of 2 lemons
     4 cloves of garlic smashed and rough cut
     a large onion peeled and cut in half and half again
     and then sliced
     1/4 cup of capers rinsed in water
     2 tab of flour for sauce 
DIRECTIONS:
     1. put oil and butter in a large 10"  fry pan on medium high heat
     2.. when oil/butter mixture is hot add the onions and fry until
          slightly brown and add the garlic and fry about 5 minutes more
         then using a slotted spoon remove leaving the oil and set aside
     3. on medium high heat add the fish which you have dried first with
         a towel; put in fry pan and and cook about 4 minutes
         on each side and  then remove and set aside
     4  in the same fry pan, add the wines, lemon juice and capers and
         cook about 5 or 6 minutes until sauce is slightly reduced
     5. (optional) take some of the flour mixture and put into a cup then
         add water or wine and stir then slowly put into the wine sauce until
         very slightly thicker; you do not have to use it all
     6. return the onions into the sauce and stir
     7. add the fish carefully and cook about 4 or 5 minutes basting
         the sauce over the fish (don't over cook fish)
     8. place the fish on a large platter and pour the sauce over them
     9. this dish will serve 4 to 6 people
